Ingredients for the Best Beef Marinade:
- Soy Sauce
- Olive Oil
- Lemon Juice
- Worcestershire Sauce
- Brown Sugar
- Granulated Garlic
- Smoked Paprika
- Coarse Ground Black Pepper
- Dried Onion Flakes
- Dried Basil
- Dry Mustard
- Kosher Salt
- Red Pepper Flakes
How to Make the Best Beef Marinade:
- Mix marinade ingredients together in a bowl until sugar is dissolved.
- Pour over beef and marinate for 4- 8 hours.
- Marinade can be made a day in advance and kept in an airtight container in the refrigerator.
How to Marinate Roast Beef:
- Place roast in a zip top bag or casserole dish. Pour marinade over beef.
- Use a fork or knife and pierce the roast all over, forcing the marinade down into the meat.
- Cover and refrigerate 4 - 8 hours.
- Remove marinated roast from refrigerator to come to room temperature about an hour before grilling.

How to Grill Marinated Roast Beef:
- Prepare a grill fire to about 300° with hickory wood for smoke flavor.
- Place Roast over indirect fire and cook with the lid closed for 1 hour.
- Use a digital thermometer to check the internal temperature of the roast and cook to desired doneness with the lid closed.
INTERNAL TEMPERATURES FOR ROAST BEEF:
- Rare: 130°
- Medium Rare: 140°
- Medium: 155°
- Well Done: 165°
Remove roast beef from the grill about 5 degrees before desired doneness and temperature will come up as it rests. We cooked our roast to about 140° and it took about an hour. The grill temperature stayed between 250- 300°.
- Allow roast to rest about 10- 15 minutes before slicing.
This marinated and grilled roast beef is delicious to slice and serve or for sandwiches or tacos topped with pico de gallo.

How to Store and Reheat:
Store grilled roast beef in an airtight container for up to 4 days in the refrigerator.

- ½ cup olive oil
- ⅓ cup soy sauce
- ⅓ cup lemon juice
- ¼ cup Worcestershire sauce
- ¼ cup brown sugar
- 2 tablespoons granulated garlic
- 1 tablespoon smoked paprika
- 1 tablespoon coarse ground black pepper
- 1 tablespoon dried onion flakes
- 1 tablespoon dried basil
- 2 teaspoons dry mustard
- 1 teaspoon kosher salt
- ¼ teaspoon red pepper flakes
- 3 pound roast beef
Instructions
- In a bowl, whisk together olive oil, soy sauce, lemon juice, Worcestershire sauce, brown sugar.
- Whisk in granulated garlic, smoked paprika, black pepper, dried onion flakes, basil, dry mustard, salt and red pepper flakes.
- Store in an airtight container until ready to use. Can be made a day in advance.
- Pour marinade over roast in a baking dish.
- Pierce roast with a fork or knife all over, pushing the marinade down into the meat.
- Cover and refrigerate 4- 8 hours.
- Remove from refrigerator one hour before grilling.
- Heat grill to 300° with hickory for smoke flavor.
- Cook roast over indirect heat with the lid closed for one hour.
- Check internal temperature with a digital thermometer and continue to cook until desired doneness.
